Put the first four ingredients in a cauldron to make them boil and to
make an infusion with the lemon peel and the cinnamon branch. Apart prepare the milk in a bowl with the yolks and the starch. When the milk with the infusions starts boiling, pour it on the
mixture of milk, yolks and starch. Use a strainer to withdraw the
solids from the mixture. Put the mixture in the cauldron where the milk infusion has been made
and cook it. Stir it with a whisk until it starts to boil so the
mixture will not stick to the walls of the cauldron. When it starts to boil, pour it a surface of stainless steel and cover
it up with film paper so the part that is in touch with the air will
not dry.
